介绍冷泡茶叶

Introducing cold-brewed tea leaves

Cold brew tea refers to a way to brew tea leaves with cool boiled or cooled water at room temperature. Different from the traditional brewing method, in the cold brewing method, the release of tannic acid and caffeine from the bitter source of the tea can effectively slow down the reduction, so as to reduce the burden on the stomach wall and make the tea more sweet and delicious. Cold brew tea is a kind of tea brewing method suitable for cooling down, and in the hot summer, cold brew tea can relieve the heat more than the traditional hot brew method.

What are the advantages of cold brew tea?

1. Because cold brew tea slows down the release of caffeine, tea tannins and theophylline in tea, the amino acid molecules in tea are easier to release under the action of brewing in cold water, and the sweet amino acid molecules in tea make tea more sweet and delicious. 2. Cold brew tea can better reduce the heat. 3. Cold brew tea can better blend with fruit, milk and other condiments due to its reduced bitterness. 4. Cold brew tea is more convenient, as long as there is mineral water, it can be brewed anytime and anywhere.

What are the disadvantages of cold brew tea?

1. Cold brew tea needs to be brewed for a longer time, and it requires more patience than traditional hot brew instant brewing. 2. Cold brew tea is not suitable for all tea leaves, and some tea leaves will not taste good after cold brewing, and the flavor will be lost.

Health effects of cold brew tea

Cold brew tea can avoid bitterness and enhance sweetness. Because in cold water, the sweet amino acid molecules in tea are easy to dissolve first, while the tannin and caffeine from bitter sources are less easy to release, which reduces the caffeine content of tea soup and reduces the burden on the stomach wall. Because the caffeine in tea is easy to dissolve at high temperatures, it increases gastric acid secretion, and some people with weak stomachs will feel slightly uncomfortable when drinking a large amount. Retaining the “catechins”, “tea polyphenols” and other substances in tea can effectively promote gastrointestinal peristalsis and clear stool, which has a great effect on slimming and cancer prevention.

So let’s find out what are the tea leaves suitable for cold brewing?

1 Green tea, all green tea can be used for cold brewing, because green tea is originally a refreshing and sweet taste to drink, so cold brewing green tea can play a greater advantage of green tea. 2 Yellow tea, yellow tea and green tea are about the same, and even at low temperatures, yellow tea affected by the stuffy yellow tea making process can reduce the impact and improve the taste of yellow tea. 3 black tea, except for the special black tea of the red dragon pearl type, most of the black tea can be used for cold brewing 4 oolong tea, except for the granular oolong tea of the Tieguanyin type, the tea leaves need to be warmed and moistened to make the tea leaves stretch and then cold brewed, other tea leaves can be cold brewed, especially the big red robe, phoenix single bush type, the way of cold brewing will not affect the taste of their mountain rhyme and rock rhyme. 5 loose white tea, the cold brew of loose white tea is similar to green tea, if you have to cold brew, you need to brew before you can try, but the flavor is not as good as hot brew, this type of tea is not suitable for cold brew, because hot brew is used for boiling, the more you boil, the more fragrant it is, and the taste of the long storage time needs hot brew and boiled tea to show, and the contents of the tea also need to be boiled to maximize volatilization. 6. If you don’t pursue the bitterness and astringency of raw Pu’er, then it is okay to pry the raw Pu’er into cold brew, but the taste is still not as good as hot bubble.

Approximate brewing time for cold brew tea is recommended:

  • Method 1: The time recommended for brewing tea leaves in the refrigerator after brewing them with cool and boiled water at room temperature
  • Method 2: The brewing time of 20°C at room temperature after brewing tea leaves in cool and white boiled room temperature water is recommended
  • Method 3: At normal room temperature, the time for brewing tea leaves with ice water is recommended

We classify the tea leaves that can be cold brewed, we divide the tea leaves into the following types and then analyze them to see if different tea leaves are suitable for cold brewing and whether it will affect the brewing time.

1. Fermented tea leaves and slightly fermented non-fermented tea leaves

Fermented tea is divided into full fermentation, semi-fermentation and post-fermentation, post-fermented tea is not suitable for cold brew tea is mainly black tea, but also includes Pu’er raw Pu’er and ripe Pu’er, old white tea, because these teas need to be brewed at a high boiling point in order to release special nutrients, such as “golden flower”, and black tea neutralizes raw Pu’erh, bitterness is the specific flavor in black tea, bitter aftertaste is a special experience, cold brewing will reduce their specific flavor, is not suitable. However, in addition to the above examples, most of the tea leaves can be cold brewed, such as Yunnan Hong, Jin Jun Mei, Da Hong Pao, Phoenix Single Bush, etc., cold brew will not be particularly affected. Non-fermented tea and micro-fermented tea are all suitable for cold brewing, because this type of tea, their flavor is fresh and sweet, cold brewing method can not only release these characteristics, sometimes can also reduce the miscellaneous taste in them, so this type of tea is very suitable for cold brew. Fully fermented tea leaves are easier to release after full fermentation, so the brewing time will be shorter than that of semi-fermented tea leaves.

2. Tea leaves of small and medium-leaf species and tea leaves of large-leaf species

In the same type of tea, the brewing time of tea leaves of small and medium-leaf varieties will be shorter than that of large-leaf tea. Let’s take the young buds as an example, Jin Jun Mei and Yunnan red gold buds, Jin Jun Mei’s tea is very slender, can be in contact with water will be more, can be easier to stretch, after the gold bud and water contact, its young buds are wrapped inside, need to slowly infiltrate into the inside of the bud, so the tea of the small and medium leaf species and the tea of the large leaf species, in the case of the same level, the tea brewing time of the small and medium leaf species is shorter than that of the large leaf species.

3. Granular tea leaves and strip leaf leaf type teas

The comparison between granular tea and striped leaf type tea is the same as that of small and medium-sized leaf species and large-leaf tea of the same grade, the area of contact between granular tea and water is relatively small, and it takes time to slowly penetrate into it, while the area of contact between striped and cord-type tea is very large, so the brewing time will be relatively short, for example, we use Tieguanyin and Phoenix single fir duck feces incense (both oolong tea with a relatively close degree of fermentation) cold brewed tea, in the case of high room temperature of room temperature water, It takes 1.5 hours for Tieguanyin to fully stretch, while duck feces can be brewed for about 1 hour before drinking, so the shape of the tea leaves will have a great impact on the brewing time.

Does the climate affect the time it takes for tea to be cold brewed?

In the case of brewing tea leaves in non-ice water and in the case of tea being brewed in the refrigerator, the climate and room temperature will affect the time of cold brewing of tea leaves.

In the case of high temperatures, after brewing tea leaves with cool white water (non-ice water), the drinking time of the tea soup will be shorter.

Personal experiment in Shenzhen with a glass cup to brew most of the green tea white tea and single bush, except in winter, about 10 minutes can start drinking, the proportion of tea is normal 1:50, the longer the taste of the tea soup is richer and mellow, if it is a hot summer, about 30 °C temperature, about 5 minutes can start drinking, of course, if you want a more mellow flavor it is recommended to extend the brewing time. Therefore, the climate affects the temperature of the water that is boiled and boils, and it will also affect the cold brewing time of the tea.

Which is the best way to use to brew most teas?

We recommend trying the lower casting method or the middle casting method cold brewing tea, of course, especially delicate and delicate tea can also use the upper casting method, such as Jin Jun Mei, Qimen Black Tea, Ming Qian Longjing, etc. The advantage of the lower casting method and the middle casting method is that the tea can be fully infiltrated, thereby reducing the waiting time for cold brewing tea.

What tea set is better for cold brew tea?
